As you said, there are lots of upgrade guides out there and while they may be a little different it's important you get the overall steps right.
First, you must upgrade vCenter Server. Next, you must upgrade the ESXi hosts. From there, I'd really recommend you read the upgrade guide documentation available here as it does a pretty good job of the rest.
